Pure tallow may have a slight leather smell. We use raw suet and clarify the tallow in our commercial kitchen which allows us to control the full process. We also add essential oil blends to provide a pleasant scent.
When stored in a cool, dry place, tallow can last up to a year or more. The melting point is 31⁰C. If your tallow melts, it will still be safe to use, but the whipped texture will be lost, resulting in a harder consistency.
